ANADESA: Our meals during holy week.

Traditional meals during Holy Week

Holy Week or Semana Santa is over! In Santiago Atitlan this is celebrated in a big way. The brotherhoods are organized to bring fruits that will be hung in the streets of the town. The neighbors are organized to make carpets where the procession will pass. The Catholic church organizes the activities of Holy Thursday; Washing of the feet of the apostles, Good Friday; The crucifixion of Jesus and the procession of the same. Saturday night is the vigil of the resurrection.

But this time we will tell you about the traditional foods that are prepared during Holy Week!

On Palm Sunday the Atitlaneca people enjoy egg cakes in broth with tomato and onion. The tradition is that in the morning hours, married women have to take this food to their mothers and mothers-in-law.

The next day with a special dish is Holy Thursday. This is days before people buy roosters or hens so that on Wednesday the slaughter of the hen is done and the next day it can be cooked and prepared for the pulique.

On Friday dried fish in tomato sauce or broth is eaten, since on Good Friday the Catholic Church prohibits the consumption of red meat. Also this is prepared with chickpeas in honey as a dessert for lunch.

And during Holy Week, various breads soaked in honey are eaten!

If you want to know how to prepare the pulique or the typical food of Santiago Atitlán "Patin" contact us, we will be happy to schedule a cooking class at ANADESA.
